Harvesting, the first step in the wine’s ageing
Everything begins with the harvest, carried out with care to select only the finest Cabernet Franc grapes. Back in the cellar, each cuvée is then monitored daily: depending on the style we seek, ageing continues either in vats or in chestnut barrels — a choice that gives our red and rosé wines the maturity that makes them rounder, smoother and more generous on the palate.
